SPINACH LASAGNA | |
6 lasagna noodles 1 lb. Mozzarella, grated 1 lb. ricotta cheese 1/3 c. Parmesan cheese 2 eggs, beaten 1 link Italian sausage 10 oz. pkg. frozen chopped spinach, cooked and drained 1 bunch green onions, chopped Nutmeg to taste Fry sausage with onion, drain well. Add well-drained spinach. Mix ricotta, Parmesan, eggs, and nutmeg. Butter a 9x9 inch pan. Layer noodles, filling mixture and Mozzarella cheese, half of each, in pan and repeat. Bake at 425 degrees for 30 minutes, covered. Remove foil and bake until cheese browns, 5-10 minutes. Serve with a red spaghetti sauce (to accent) and grated Parmesan. |
