POULTRY POCKETS 
1/2 lb. cooked turkey or chicken, diced
1/2 c. diced celery
1/4 c. diced red onion
1/2 sweet red pepper, diced
2 tsp. mayonnaise
1 tsp. lemon or lime juice
1/8 tsp. salt, if desired
1/8 tsp. black pepper
Pinch of cayenne, to taste
2 whole wheat or sesame pitas
Alfalfa sprouts for garnish (optional)

Combine all the ingredients except the pitas and sprouts. Refrigerate the mixture for 30 minutes or longer. Cut the pitas in half crosswise to form four pockets. Fill the pockets with the salad mixture and, if desired, top each pocket with alfalfa sprouts. Makes 2 sandwiches.
