EGGPLANT PIZZA SNACKS 
1 med. eggplant, pared and cut into circles
Dash of salt
8 oz. tomato paste
1 c. Parmesan cheese, grated

Salt the eggplant slices, then let drain on paper towel. Lay the eggplant slices flat in a baking pan or on a cookie sheet. On each slice, spread a layer of tomato paste and sprinkle well with the grated cheese. Bake at 350 degrees for 20 to 30 minutes.
