HERBED PARMESAN CHICKEN 
1/4 c. grated Parmesan or Romano cheese
1/4 c. wheat germ
1 tbsp. chopped fresh parsley
1 tsp. dried oregano leaves, crumbled
1/4 tsp. garlic powder
2 tbsp. butter
4 skinned & boned chicken breast halves (about 1 1/4 lbs.)

Packaged plain bread crumbs can be used instead of the wheat germ.

Mix cheese, wheat germ, parsley, oregano and garlic powder in small bowl. Melt butter in a small microwave - safe cup or bowl. Brush both sides of chicken with melted butter, then dip in cheese mixture to coat. Arrange spoke - fashion in an 8-inch square microwave - safe baking dish with thicker parts toward outside edge. Sprinkle any remaining crumb mixture over top.

Cover with paper towel. Cook on high 6 to 7 minutes, rotating dish 1/2 turn after 5 minutes, until chicken is barely opaque and slightly pink in center of thickest part when tested with a knife. Let stand 3 minutes or until chicken is opaque and loses its pink color. Just before serving, garnish plate with lemon wedges and parsley sprigs. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
