STUFFED SHELLS 
2 lbs. sausage
1 lg. onion, chopped
2 (10 oz.) packages chopped spinach
1 1/2 c. Italian bread crumbs
3/4 to 1 c. grated Romano cheese
3 eggs
1 lb. large shells
Spaghetti sauce

Brown sausage. Drain off fat. Add onion. Cook spinach and drain well. Add to sausage and onion mixture along remaining ingredients. Cook shells, drain and rinse. Pour a small amount of spaghetti sauce in bottom of 9 x 13 pan. Fill each shell with stuffing mixture making a single layer in pan. Cover shells with more spaghetti sauce. Add a sprinkle of grated cheese. Cover with foil and bake until bubbly. Bake at 350 degrees for about 45 minutes.
