CARROT SALAD WITH RAISINS AND
NUTS
 
4 lg. carrots
1/2 c. raisins
1/2 c. chopped pecans
3/4 tsp. salt
Dash pepper
2 tsp. grated lemon peel
1 tbsp. lemon juice
1 c. sour cream or
1/2 sour cream & 1/2 mayonnaise

Scrape carrots well. Place them on ice for 1 hour. Grate them coarsely into a bowl. Add an mix lightly raisins, pecans, salt, pepper and lemon juice. Place the salad in bowl. Pour mayonnaise and sour cream or mayonnaise over salad.
