COCONUT CAKE | |
1 box yellow cake mix or make from scratch 2 c. sour cream 2 c. granulated sugar 12 oz. frozen coconut, thawed 8 oz. Cool Whip Follow directions on box to make cake. Bake in 2 layers - cool 1 hour. Mix sour cream, sugar and coconut and chill. Split the 2 layers to make 4 layers. Set aside 1 coconut cream mixture. Put coconut-cream filling on 3 layers, cut side up. Put on top layer. Mix 1 cup coconut cream mixture with Cool Whip. Ice top and sides. Refrigerate 2 or 3 days. |
