TUNA PATTIES WITH CHEESE SAUCE 
2 lg. eggs
2 cans (6 1/2 oz. each) chunk light tuna in water, well drained and flaked
1/3 c. milk
1 tsp. lemon juice
2 tbsp. sweet pickle relish
1 c. bran flakes

Beat eggs and add remaining ingredients. Mix well and shape into 6 patties. Place on lightly greased baking sheet. Bake at 350 degrees for 25 minutes, turning patties after 15 minutes.

Cheese Sauce:
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1/2 c. shredded cheddar cheese
parsley

Melt butter in small saucepan over low heat. Stir in flour, salt and pepper. Add milk gradually, stirring until smooth. Increase heat to medium and cook until mixture boils and thickens, stirring constantly. Add cheese, stirring until melted. Serve over patties with sprinkled parsley.
