VEGGIE CASSEROLE 
1 lg. (20 oz.) bag frozen mixed veggies
2 zucchini, sliced crosswise into 1/8 inch slices (not too thin)
1/4 c. butter
3 tbsp. flour
1 tbsp. grated onion
Dash of Tabasco
1/2 tsp. dry mustard
Salt & pepper
Grated cheddar cheese

Steam zucchini a little first. Cook veggies and reserve water. Melt butter, add flour and stir. Add vegetable juice (with enough milk to make 2 cups) and cook until thickened. Add onion, salt, pepper, Tabasco and mustard. Put veggies in casserole dish. Arrange sliced zucchini in rows on top. Pour over sauce, top with grated cheese. Bake at 400 degrees for about 20 minutes.

This is a real family favorite and has been served many, many times even on Thanksgiving.
