RHUBARB PIE - ROTH'S HOTEL 
1 unbaked pie crust
4 c. diced rhubarb
1 c. sugar
2 eggs
2 tbsp. tapioca
1/2 tsp. nutmeg
1/2 tsp. vanilla

Line pie tin with pastry crust. Mix rhubarb, sugar, eggs, tapioca, nutmeg and vanilla in bowl. Allow to stand 10 minutes. Pour into unbaked crust. Bake 450 degrees for 15 minutes. Reduce heat to 325 degrees. Bake 30 minutes. longer.
