FRESH CAULIFLOWER SOUP 
1 sm. cauliflower
1 sm. onion, thinly sliced
2 c. chicken broth
2 c. diced chicken
2 tbsp. butter
Salt
Pepper

Cut out cauliflower core, remove outer leaves and separate into small flowerets. Combine cauliflower in medium saucepan with onion, and chicken broth and diced chicken. Bring to boil. Reduce heat. Simmer until cauliflower is tender about 10 minutes. Remove about 1/3 of the cauliflower and press through a vegetable press or a food processor or blender. Mix back with the 2/3 of remaining cauliflower and cook for about 3 minute until thoroughly heated. Serve.
