CURRIED SHRIMP 
9 c. water
3 lbs. lg. shrimp
1 lg. onion, fine chopped
1/2 c. apple, fine chopped
1/2 c. celery, fine chopped
1/4 c. butter
1 c. water
2 c. whipping cream
2 tbsp. curry powder
1/2 tsp. salt
1/4 tsp. pepper
Hot cooked rice

Boil 9 cups water. Add shrimp, bring back to boil. Reduce heat. Simmer 5 minutes. Drain well. Peel and devein shrimp. Set in refrigerator.

Saute onions, apple and celery in butter for 5 minutes. Add 1 cup water. Cook uncovered over low heat for 25 minutes or until most of liquid is gone. Add whipping cream, curry powder, salt and pepper. Simmer uncovered 10 minutes. Add chilled shrimp. Simmer until heated thoroughly. Serve over rice.
