CREAM CHEESE MINTS 
8 oz. cream cheese
2 lbs. powdered sugar
1/2 tsp. peppermint, wintergreen or lemon extract
1/4 c. soft butter
Few drops food coloring

Combine cream cheese and butter in heavy bottomed saucepan. Stir over low heat until cheese is soft and butter is melted and the mixture is thoroughly blended. Add powdered sugar and stir well. Add food coloring and extract. If desired, split dough up and do different colors and extracts. Roll into 1 inch balls. Place on waxed paper. Press with fork. Let stand, uncovered 4 hours or overnight. Maybe dry on outside but creamy and moist inside. Makes 8 dozen.
