CHOCOLATE ROUGHS | |
1/2 lb. good chocolate 2 oz. cocoa butter 1/4 lb. icing sugar desiccated coconut as required Place chocolate, cocoa butter and icing (confectioners) sugar in a basin over gently simmering water. Don't allow the water to touch the bottom of the bowl. Stir occasionally. When melted, remove from heat and allow to cool a little. Add sufficient desiccated coconut to make quite a stiff mix. Spoon bite-size pieces onto a tray lined with waxed paper and allow to harden. Store in an airtight container. Submitted by: chefdave |
