CHOCOLATE CHIP SPICY DATE CAKE | |
1 1/2 c. chopped dates 1 1/4 c. boiling water 1/2 c. butter (room temperature) 1/4 c. peanut oil 1 1/4 c. sugar divided 2 eggs, beaten 1 tsp. vanilla 1/2 tsp. butter extract 1 1/2 c. flour 2 tsp. cinnamon 1 tsp. allspice 1 tsp. baking soda 1 tsp. salt (optional) 3/4 c. semi sweet chocolate chips 1/2 c. chopped walnuts Place dates in a bowl; pour boiling water over and let stand until plump. Let them cool. Cream butter and oil with 1 cup of sugar in medium bowl until light and fluffy. Mix in eggs, vanilla and butter flavoring. Sift flour, cinnamon, allspice, salt, soda in bowl. Add flour mixture and date mixture to butter mixture. Blend well. Pour batter into greased and lightly floured 9 1/2 inch bundt pan. Combine chocolate chips, walnuts and remaining 1/4 cup sugar. Sprinkle over batter. Bake at 350 degrees for 35 to 40 minutes. Cool. Invert twice so nuts and chips are on top. |
