BEEF STROGANOFF | |
1 1/2 lbs. lean beef 4 tbsp. butter 4 tbsp. butter 1 tbsp. flour 2 small onions, minced 1 c. beef broth 1/2 lb. mushrooms 1/2 c. sour cream 1 c. dry white wine salt & pepper Cut meat into strips and sprinkle with salt & pepper. In large pan, make a paste with butter and flour until it turns golden brown. Slowly pour broth into pan, stirring constantly. Bring to boil; add salt & pepper; set aside. Fry onion in butter, add meat and gently fry until brown. Add to flour mixture and add wine. Cook gently 1 1/4 hours, stirring occasionally. Wash & cut mushrooms; add to pan. Cook another 30 minutes; lower heat; add sour cream. |
