SPINACH MANGO SALAD W/ RASPBERRY VINAIGRETTE | |
SALAD: 2 cups spinach 2 beets, sliced 1 cup sliced tomato (or cherry tomatoes) 1/2 cup olives 1 cup sliced mangoes 1/4 cup sunflower seeds (remove shells) Put all ingredients into a large bowl and toss lightly until ingredients are evenly distributed. DRESSING: 1 cup raspberry vinegar 1 cup olive oil 1 cup vegetable oil 1 cup pure maple syrup 1 tbsp. Dijon mustard Put all ingredients into a bowl and mix well. Submitted by: Kaylah Laws |
