SWEDISH MEATBALLS 
3 tbsp. dried breadcrumbs
1/2 tsp. salt
1 lb. ground beef chuck
4 tbsp. vegetable oil
1/4 c. heavy cream
1/2 tsp. freshly ground black pepper
1/2 c. chopped onion

Combine the breadcrumbs, cream, salt and pepper in a bowl. Add the ground chuck and onion to the bread crumb mixture and combine. With wet hands, form the mixture into meatballs about the size of walnuts. In a 12" skillet, heat the vegetable oil over medium heat. Carefully add the meatballs and saute until well browned, about five minutes. Shake the pan back and forth during cooking to prevent the meatballs from sticking. Serves 4.
