POTATO SALAD | |
3 c. potatoes, cooked & diced 1 lb. tofu, diced 1 c. chopped vegetables, green peppers, celery, summer squash 1/4 c. minced onion or 2 tbsp. chopped chives 1/4 c. pickles or green olives, chopped 2 tbsp. minced fresh parsley 3/4 c. mayonnaise 1/2 tsp. salt 1 clove garlic or 1/4 tsp. garlic powder In a large bowl, mix together potatoes, tofu, vegetable of your choice, onion or chives, pickles or olives and parsley. In a separate bowl, blend mayonnaise, salt and garlic. Mix dressing into vegetables. Chill and serve. Serves 6. |
