VANILLA SAUCE FOR FRUITED BROWN
BETTY
 
1 1/2 c. milk
1/4 c. sugar
2 tsp. cornstarch
1 tbsp. cold water
1 egg, slightly beaten
1 tsp. vanilla extract
1/8 tsp. salt (if desired)

Scald milk and sugar; dissolve cornstarch in water and stir into hot milk. Pour mixture into egg, stirring. Return to pan and simmer 5 minutes, stirring constantly. Add vanilla and salt. Serve warm with Brown Betty. Makes 1 1/2 cups.
