SWEET POTATOES WITH BROWN SUGAR AND APRICOT SAUCE | |
1 c. packed brown sugar 1 c. apricot nectar 1/4 c. butter 2 tsp. grated lemon peel 1/4 tsp. cinnamon Dash of nutmeg Sweet potatoes, cut in 1" slices 1/2 c. pecan halves In medium saucepan bring sugar, nectar, butter, lemon peel, cinnamon and nutmeg to boil; boil gently 2 minutes. Arrange potatoes in baking dish. Pour sauce over potatoes; sprinkle with pecans. Bake in preheated 350 degree oven, turning occasionally, 30 minutes or until potatoes are heated through and sauce is bubbly. 10 servings. |
