CORNBREAD 
1 1/3 c. yellow cornmeal
1 1/3 c. flour
2 tsp. baking powder
1 tsp. salt
1 egg
1/2 c. bacon drippings, melted
1 1/4 c. milk

Melt 2 tablespoons of bacon drippings in an oven proof skillet. Heat skillet and coat bottom and sides. Keep skillet heated while preparing corn bread. Combine dry ingredients in another smaller bowl combine egg 6 tablespoons drippings (warm) and milk. Combine two mixtures and beat well with a wooden spoon until there are no lumps. Into the hot skillet, pour in cornbread mixture. Immediately put into 400 degree oven and bake 20 minutes. To crisp up bottom side, turn out and return to skillet, bottom side up. Bake another 5 minutes.
