1 lb. ground beef
1 pkg. taco seasoning mix
1 tsp. chili powder (optional)
1/2 tsp. cumin (optional)
1 small can tomato sauce
3/4 c. water
8 corn tortillas
1 small onion, chopped
2 c. shredded Cheddar cheese

Preheat oven to 350°F. Brown ground beef. Add taco seasoning, chili powder and cumin. Mix well. Stir in tomato sauce and water. Simmer about 20 minutes. Spray vegetable oil on a 2-quart casserole dish. Place 4 tortillas on bottom of dish. Pour 1/2 meat mixture over tortillas. Sprinkle with 1/2 onions and 1/2 cheese. Repeat with remaining tortillas, meat mixture, onions and cheese.

Bake approximately 20 minutes until cheese is bubbly. This dish can be frozen.
