POTATO DRESSING FOR POULTRY 
1 c. diced celery
1/2 c. diced onion
2 c. bread crumbs
4 tbsp. butter
3 eggs, beaten
Chopped parsley sprigs
2 c. mashed potatoes

Simmer celery and onion in 1/4 cup water until tender. Brown bread crumbs in butter in skillet. Stir eggs and parsley into potatoes then stir in celery mixture and bread crumbs. Spoon into greased casserole, cover and bake at 350 degrees for 30 minutes. Uncover and bake for 15 minutes longer.
