COWBOY COFFEE CAKE 
2 1/2 c. flour
2 c. brown sugar, packed
1/2 tsp. salt
2/3 c. shortening
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. sour milk
2 beaten eggs

In bowl, mix flour, sugar and salt. Cut in shortening until mixture resembles coarse crumbs; reserve 1/2 cup for topping.

To remaining crumbs, add baking powder, soda, and spices; mix well. Add milk and eggs; mix well. Turn into 2 greased and floured 8 x 1 1/2 inch round baking pans. Top with the 1/2 cup reserved crumbs. Bake at 375 degrees for 25 to 30 minutes. Serve warm. Makes 2 coffee cakes. 6 to 8 servings each. Real easy.
