BACON STUFFED SWEET POTATOES 
8 lg. sweet potatoes
1/4 c. butter
1 c. sour cream
1 egg
2 tsp. sugar
1 tsp. salt
9 crisp bacon sliced, crumbled

Wash potatoes. Grease skins of potatoes and bake at 375 degrees for 1 hour or until soft to touch. Cut a long oval slice from top of potato and scoop out potato pulp into a bowl. Add butter, sour cream, egg, salt and sugar to potatoes. Beat well, stir in crisp bacon. Place mixture back into potato shells, stuffing them high. Sprinkle with paprika. Bake at 400 degrees for 10-15 minutes or until heated through. Serves 8.
