KIDNEY BEANS AND RICE 
2 c. cooked rice
1 sm. Jimmy Dean sausage
1/2 onion, chopped
1 tbsp. flour
1 tbsp. chopped parsley
1/3 c. brown sugar
Dash chili powder
1/4 tsp. pepper
2 stalks chopped celery
1 tbsp. bacon grease or butter
1 (#303) can New Orleans style kidney beans

Melt grease in skillet and saute onion and celery. Brown crumbled sausage in second skillet. Drain grease off meat and discard. Remove onions and celery when tender and set aside.

Add bacon grease to skillet to make 1 tbsp. Blend flour into drippings and cook over low heat, stirring until brown. Add bean juice plus water to make 1 cup liquid. Cook until desired thickness. Add onions, celery, beans, meat and seasonings. Simmer 10 minutes. Serve over rice.
