COCONUT CUSTARD PIE 
3 eggs, beaten
1 1/2 c. sugar
2 tbsp. flour
1/2 stick butter, sliced
2/3 c. buttermilk
1 tsp. vanilla
1/2 c. coconut

Combine sugar and flour. Mix with beaten eggs, buttermilk, vanilla and coconut. Add butter and beat (very slightly until sugar can be dissolved). Pour into an unbaked pie shell. Bake at 375 degrees for 40-50 minutes.
