SQUASH CASSEROLE 
2 cans of squash or 3 lbs. of fresh squash, cooked
1/2 c. green pepper, chopped
1 med. onion
2 eggs
1 c. Cheddar cheese, grated
3/4 c. bread crumbs
1 1/2 tbsp. sugar
1/2 stick of butter

Saute butter, onions and pepper. Drain squash and mash with sugar. Mix rest of ingredients together. Bake at 350 degree for 30 minutes. Can microwave for 10 minutes on high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
