RICE WITH PEPPERS 
8 c. cooked rice
2 (4 oz.) cans green Ortega peppers, chopped
2 pt. sour cream
3 c. Jack cheese, grated

Mix lightly in baking dish. Bake for 1 hour at 350 degrees. Last 20-30 minutes sprinkle grated longhorn or cheddar cheese on top. Figure approximately 3 servings per cup (large servings). You can mix types of cheese.
