PEPPER JACK POTATOES | |
6 medium potatoes, peeled and cut into 1/4 inch slices 1 medium onion, sliced 1/3 cup butter, melted 1/2 tsp. salt 1/4 tsp. chili powder 1/8 tsp. cayenne pepper 1/8 tsp. pepper 1 1/2 cups shredded pepper Jack or Monterey Jack cheese, divided In a large bowl, combine the potatoes and onions. Combine the butter and seasoning; drizzle over the potatoes and onions. Toss to coat. Place half in a greased 13 x 9 x 2 inch baking dish. Sprinkle with half the cheeses; top with remaining potatoes and onions. Cover and bake at 400°F for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. |
