SAUSAGE PIE 
6 links Italian sausage
4 egg yolks
1 tsp. ground pepper
1 lb. ricotta cheese
1 c. grated Romano cheese
1/2 tsp. salt
4 egg whites, whipped
1 tsp. black pepper
3 tsp. grated Parmesan cheese

Pastry for 9 inch double crust pie. Remove sausage meat from casing and fry over medium heat until lightly browned, breaking it into pieces as it cooks. Remove from heat and drain.

Mix together egg yolks, 1 teaspoon pepper, ricotta and Romano cheese and salt. Add sausage and whipped egg whites. Stir to blend and pour into pie shell. Cover with top crust and crimp edges. Brush top with milk. Bake in a 500 degree oven for 15 minutes. Lower heat to 375 degrees and bake for another 20 minutes.
