1 qt. stemmed strawberries 3 c. light honey 1/2 c. lemon juice Combine berries and honey. Let stand 3 to 4 hours. Bring slowly to a boil, stirring occasionally until honey fully dissolves. Cook rapidly until thick, about 20 minutes. Add lemon juice and cook 10 minutes longer. Spoon hot into hot sterilized jars. Seal and process in a boiling-water bath for 15 minutes. Yield: 4 half-pints. |
