ROAST DUCK 
Duck
Onion
Potatoes

1 can consomme
1 can water
Grated orange peel
Cooking sherry

Soak duck 3 or more hours in salted water. Salt and pepper inside and outside after patting dry. Stuff with onion, potatoes, and apple that have been sliced.

Pour consomme and can of water into roasting pan. Cover duck and baste with juices while it bakes for 2 1/2 hours at 325 degrees. Remove cover and grate orange peel and sprinkle over duck. Continue cooking for 40 minutes, uncovered, and baste 4 times with cooking sherry.
