ROAST GOOSE OR DUCK | |
1 goose or duck 4 c. dry bread crumbs 2 apples, peeled and diced 1 sm. onion, diced 2 stalks celery, chopped 1 c. seedless raisins 1 tsp. poultry seasoning 1 1/2 c. water Salt and pepper Thoroughly wash goose or duck under cold running water, inside and out. In a large bowl, combine crumbs, apples, onion, celery, raisins and pepper, sprinkle with poultry seasoning, stir and pour water over and stir again. Rub inside of goose or duck with salt. Stuff and skewer opening shut. Roast, bread side down on a rack for 45 minutes at 425 degrees F. then turn oven down to 350 degrees F. and continue roasting until done. |
