OATMEAL DATE COOKIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
3 eggs
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 c. quick cooking rolled oats
1/2 c. chopped walnuts
1 c. cut up dates
1 c. flakes coconut

Cream shortening and sugars until light and fluffy. Add eggs one at a time, beating well after each addition. Blend in vanilla. Sift together flour, baking powder, soda, and salt. Gradually add dry ingredients to creamed mixture; mix well. Stir in oats, nuts, dates (or raisins) and coconut. Drop by teaspoonfuls about 2 inches apart on greased baking sheet. Flatten with bottom of drinking glass dipped in sugar.

Bake at 375 degrees for 8 minutes or until lightly browned. Makes 5 dozen.
