LEMON BARS 
CRUST:

1/2 c. softened butter
1 1/3 c. flour
1/4 c. sugar

FILLING:

2 beaten eggs
3/4 c. sugar
2 tbsp. flour
1/4 tsp. baking powder
3 tbsp. lemon juice

Combine crust ingredients with pastry blender or fork. Pat into ungreased 8 inch pan. Bake at 350 degrees for 20 minutes or until brown on edges.

Meanwhile, combine filling ingredients. Pour filling over partially baked crust. Bake for 18-20 minutes or until set. Sprinkle with confectioners' sugar. Cool. Cut into 16 bars. Option: Instead of sprinkling sugar on top, let cool, then pour on a glaze.

GLAZE:

1 1/4 c. confectioners' sugar
1 tbsp. boiling water
1 tsp. milk
1 tsp. vanilla
1 tbsp. butter, melted
