SPINACH MEAT LOAF | |
2 lb. ground beef 2 eggs, beaten 2-3 bread slices, broken in sm. pieces 1 tsp. pepper 1 chopped onion 1 lg. jar spaghetti sauce 1 c. milk Mix all ingredients, except spaghetti sauce, using only 1 cup spaghetti sauce in original mixing. Using a 12 inch piece of aluminum foil, place meat mixture on and pat mixture into rectangular shape. See step 2. SECOND STEP: 2 (10 oz.) pkg. frozen chopped spinach 6 slices sliced cooked ham (luncheon meat) 6 slices yellow American cheese Thaw and drain spinach; spread over meat mixture. Place ham slices over spinach, roll jelly roll fashion, using foil to roll it. Remove foil, place in loaf pan. Pour half remaining sauce over loaf. Bake 1 hour and 50 minutes at 350 degrees. Cut cheese slices into triangles and place on top of baked meat loaf. Spoon on remaining sauce. Bake 5-10 minutes longer. |
