FROSTED BIG APPLE PIE 
Egg yolk pastry
4 tsp. lemon juice
5 lbs. peeled, sliced tart apples
3/4 c. granulated sugar
3/4 c. brown sugar (firmly packed)
1 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg
1/2 c. flour

Roll 1/2 of dough into rectangle 15 1/2 x 10 1/2 and line jelly roll pan. Sprinkle lemon juice over apples. Put 1/2 apples in shell.

Combine other ingredients; sprinkle 1/2 of mixture over apples in pan; spread remaining apples on top and add remaining sugar-spice mixture.

Roll remaining pastry and place on top, seal and crimp edges. Brush with milk and sprinkle with sugar. Cut vents in top. Bake in 400 degree oven 50 minutes. Cool, drizzle with confectioners' sugar mixed with milk to make a thin icing. Cut in squares to serve. (24 servings)
