FROZEN FRUIT MEDLEY | |
1 lg. can fruit cocktail, in syrup 1 pkg. lemon Jello (sm.) 1 c. hot water 2 tbsp. lemon juice (fresh or bottled) 2 (3 oz.) pkg. cream cheese 1/2 c. mayonnaise 1 1/2 c. tiny marshmallows 1/4 c. drained quartered cherries 1 c. heavy cream, whipped Drain fruit cocktail, reserving 1 cup syrup. Dissolve Jello in hot water. Add syrup and lemon juice. Chill until partially set. Soften cream cheese and add mayonnaise and beat until smooth. Add to Jello and mix well. Stir in fruit cocktail, marshmallows and cherries. Fold in whipped cream. Remove both ends from fruit cocktail can. Cover one end with heavy foil. Pour in mixture and freeze 8 hours or overnight. (Use 2 cans or ice cube trays.) Slice and serve on lettuce. Makes 10-12 servings. |
