CORN STUFFED PEPPERS 
1/2 doz. parboiled green peppers, halved and cleaned
1 #2 can of cream style corn
2 eggs
3/4 c. cracker crumbs
1/2 c. milk
1 tbsp. minced onion (dried, frozen or fresh)

Mix above 5 ingredients and place mixture in each pepper half. Top with more cracker crumbs and a dot of butter. Add a little water to bottom of flat pan. Bake peppers in pan for 30 minutes or until tops are lightly browned.

Remove from oven and top each pepper with slice of Velveeta cheese. Return to oven and let cheese just begin to melt. Remove and serve at once.
