GRANDMA'S ROLLS | |
2 c. milk, scalded 2 tsp. salt 1/4 c. sugar 1/3 c. shortening 2 pkgs. yeast in 1/2 c. water About 6 c. flour Place milk, sugar and 1/3 cup shortening in large bowl and cool to lukewarm. Add yeast and 3 cups flour. Beat thoroughly; add flour to make a dough slightly softer than for bread. Knead until smooth and elastic. Place in greased bowl; turn to grease top. Let rise until double. Knead and shape as desired. Brush with melted shortening and let rise in warm place until doubled. Bake in hot oven, 400 degrees, about 20 minutes until brown. For Cinnamon Buns: Add 1 egg and 1/4 cup sugar to above recipe. Follow recipe until ready to shape as desired then divide dough and roll one half at a time into a rectangle. Brush with melted butter, sprinkle with light golden brown sugar, cinnamon and raisins; roll up like jelly roll. Cut in 1" circles and put on a greased baking sheet, (allow room for rolls to rise). Let rise until doubled and bake in hot oven, 400 degrees, until lightly browned. While hot, glaze with 1 tablespoon melted butter, 1/2 cup warm milk, 1 teaspoon vanilla and 1 pound sifted confectioners' sugar. Use warm. For Doughnuts: Follow recipe for cinnamon rolls until ready to shape as desired. Roll and cut dough for doughnuts; let rise and fry in deep fat until browned on both sides. Glaze with the same glaze as for buns. |
