POTATO DINNER MUFFINS 
2 potatoes
4 tbsp. butter
2 eggs
4 tsp. sugar
1 pkg. active dry yeast cake dissolved in
1 cup of warm water
4 cups flour, sifted with
2 tsp. salt

Boil potatoes whole and mash through colander. Add other ingredients and add to potatoes. Beat eggs well before adding.

Set to rise at 10 A. M. and drop into buttered muffin pan at 4 P. M. and let rise 2 hours (or til doubled).

Bake for 20 minutes in a preheated 350°F oven.
