1 lb. ground chuck Salt to taste 1 (16 oz.) can dark red kidney beans, drained 1 onion, chopped 4 tomatoes, chopped 1 avocado, chopped 1 small can sliced black olives 1 head lettuce, torn into bite size pieces 8 oz. thousand island dressing 4 oz. grated cheddar cheese 1 (7 oz.) bag Doritos or tortilla chips, broken Brown meat in skillet. Drain off excess fat. Add salt and drained beans and simmer for 10 minutes. Combine rest of ingredients except tortilla chips in large salad bowl. Add hot beef mixture and tortilla chips. Toss and serve immediately. 6 to 8 servings. |
