LEMON 'N RAISIN BREAD PUDDING | |
1/4 c. butter 4 slices bread, cubed 2/3 c. sugar 1 tsp. grated lemon peel 2 tbsp. lemon juice 1/3 c. raisins 1 c. milk 3 eggs Cinnamon 1. Microwave butter in 1 quart glass casserole 1/2 to 1 minute. 2. Add bread, sugar, lemon peel and juice and raisins. Toss to mix. Combine milk and eggs; beat until smooth. Sprinkle with cinnamon. 3. Place casserole in 8 inch square glass baking dish. Add 1 cup warm water to baking dish. 4. Microwave, uncovered, 10 to 12 minutes or until center is just about set. Serve with cream. |
