LEMON 'N RAISIN BREAD PUDDING 
1/4 c. butter
4 slices bread, cubed
2/3 c. sugar
1 tsp. grated lemon peel
2 tbsp. lemon juice
1/3 c. raisins
1 c. milk
3 eggs
Cinnamon

1. Microwave butter in 1 quart glass casserole 1/2 to 1 minute.

2. Add bread, sugar, lemon peel and juice and raisins. Toss to mix. Combine milk and eggs; beat until smooth. Sprinkle with cinnamon.

3. Place casserole in 8 inch square glass baking dish. Add 1 cup warm water to baking dish.

4. Microwave, uncovered, 10 to 12 minutes or until center is just about set. Serve with cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
