AMARETTO CHEESE CAKE 
2 ready made graham crusts

FILLING:

6 eggs, room temperature
2 c. sugar
2 (8 oz.) pkg. cream cheese

TOPPING:

Amaretto
1/2 c. or less brown sugar
2-3 tbsp. butter
1 lg. bag almonds

Beat eggs; add sugar slowly, then blend in cream cheese. Add Amaretto, 1.5 oz. approximately. Pour over crust. Bake at 375 degrees or until lightly brown, about 35 minutes.

TOPPING: In frying pan with wooden spoon melt butter, add brown sugar, stirring add Amaretto and almonds, stir until thickening of sugar. Spread on cakes quickly (it hardens).

QUICK TOPPING: Add 1 can blueberry pie filling for blueberry cheese cake. Put in refrigerator.
