FISH CASSEROLE | |
1 lb. haddock fish 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. thyme 10 oz. frozen peas Cucumber or zucchini 1 stalk celery 1 sm. onion 1 carrot 1 tbsp. lemon juice 1/4 c. butter STEP 1: Arrange fish in casserole dish. Sprinkle with salt and pepper and thyme. Microwave 4 minutes. STEP 2: Chop all vegetables, layer on fish. Drop small pieces of butter. Sprinkle with lemon juice. Microwave again with vegetables for 6 minutes. This is delicious and low calorie and is done easily in a microwave. |
