POT LUCK POTATO CASSEROLE 
1 to 2 lb. pkg. frozen hash brown potatoes
1/2 c. melted butter
1/2 c. chopped onion
1 can cream of chicken soup
2 c. grated mild Cheddar cheese
1 tsp. salt
1 tsp. pepper
1 pt. sour cream
1 1/2 c. Ritz crackers
1/4 c. butter

Defrost potatoes and mix other ingredients. Top with 1 1/2 cup Ritz crackers and 1/4 cup melted butter. Bake at 350 degrees for 45 minutes.
