CHERRY CHERRY PIE 
1 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
2 (16 oz.) cans red tart cherries, packed in water (save juice)
1 c. cherry juice
1/4 tsp. red food coloring (optional)
1 baked 9" pie shell or crumb crust
Whipping cream (optional)

Mix sugar, cornstarch and salt in a saucepan. Add juice and coloring; stir until smooth. Cook until thickened and clear, stirring constantly. Add cherries, simmer 10-15 minutes, stirring gently once or twice. Cool. Pour into pie shell. Chill. Garnish with whipped cream if desired. Also good with another crust over it.
