CARROT CAKE 
2 c. light brown sugar
1 1/2 c. vegetable oil
4 eggs
2 1/4 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
3 c. grated raw carrots (16 oz.)
1 c. chopped walnuts
Cream Cheese Frosting

In a mixer bowl, combine sugar, oil and eggs. Beat 2 minutes on medium speed. Combine dry ingredients and add to sugar mixture. Beat 1 minute. Stir in grated carrots and nuts.

Spread batter in greased and floured 10 inch tube pan and bake at 350 degrees until cake tests done, about 1 hour. When cool, remove from pan. Frost with Cream Cheese Frosting. Serves 10.
